The etransfer was actually made by me from one bank account to another and the notification hadn't come instantly so I went about my day and totally forgot about the transfer.

Thanks for sharing your tips. I was able to e-transfer into Coinbase last night, after changing my Profile Name on Interac profile page to match the full name on Coinbase. Unfortunately, after Coinbase received my e-transfer and a couple of successfully trades, now they restricted my account from further buys, pending a 30-day wait before they can review my account.
Interac is a way to get your foot in the door. Once you're in the country there's a lot more jobs willing to hire you, and with better pay. Visa processing is pretty backed up at the moment so a lot of companies are pretty reluctant to hire from overseas, but your visa isn't tied directly to your job. As long as your new employer is willing to sponsor visa renewal, you can change jobs easily.
